Fortheporkbelly:

1.Usingasharpknife,scoretheporkbelly, seasonwithsaltandcrushedblackpepper.

2.Inalargedeeptrayaddtheporkbelly skinsideupalongwiththecarrots, parsnips,staranise,thymeandgarlic, thenaddwateruptothetoplayeroffat, makingsurethewaterisnotcoveringthe skin.Coverthetraywithaluminiumfoil andcookintheovenat160ºCforfour hoursuntiltheporkistender(puta woodenspoonhandlethroughandifit easilypenetratesthemeat,itisdone).

3.Removethefoilandthenroastat 190ºCfor5-8minutestocrispuptheskin.

4.Savetheliquidasastockforfuture gravyorjus.

5.Leavetheporktocooldown.When fridgecold,portionitwithasharpbread knife,120-140g/portion

Forthebeetroot:

1.Whilsttheporkbellyisroasting,place thebeetrootonatrayintheovenfor3040minutesuntilcooked.Leavetocool downandthenpeeltheskinoff,keeping thecoloursseparate.

2.Peeltheredonionsandfinelydice.Mix withtheoliveoil,sugarandbalsamic vinegar.

3.Usingamandolinoraknifeslicethe beetrootintothinslicesandthen marinatetheminthedressing,keepthe redbeetrootinaseparatecontainer.

Forthebutternutsquashpurée:

1.Peelanddicethesquash.Inalarge saucepanaddthedicedbutternutsquash andcoverwithwater,addapinchofsalt andboiluntilsoft.

2.Drainthebutternutsquashandthen usingaliquidiserblenditwithbutterand abitofthecookingliquiduntilsmooth.

3.Seasonwithsalt,pepperandtherestof thespices,(addspiceslittlebylittleto taste).

Fortheblackpuddingcrumb:

1.Dicetheblackpuddingandplaceitona trayintheovenwiththeporkbellyfor3040minutesuntildry.

2.Drainthefatfromtimetotimeandstir it-itneedstobereallydry.

3.Usingtheliquidiserblendtoacrumb. Placeitbackonatraywithbakingpaper anddryintheovenfor10-15minutes.

Toserve:

1.Addtheportionedporkbellyonatray skinsideupat180ºCfor10-14minutes.

2.Inasaucepanreheatthebutternut squashpurée,tasteandcorrectthe seasoningifneeded.

3.Onawarmplateaddthepuréeand withthebackofthespoonspreaditalong theplate.Addthebeetrootandthepork belly.Decoratewiththeblackpudding crumbsandpea-shoots. 4.Serve.

1.Removeskinandsinewsfromtheturkey breast(saveforthegravy)andthencut into2cmthickslices.Thintheslicesout slightlyusingameathammer.

5.Rolltheturkeyoveritselftocreatea

6.Rollthewholeballontineintheclingfilm andtieeachend.

7.Pre-heatthewaterbathto65ºCandthen poachtheturkeyfortwohoursuntilthe coretemperaturereaches65ºCfora minimumoftenminutes.

8.Chillinthefridgeovernight.

Method

1.Makethecraquelinandchocolatedisc first.

2.Forthecraquelin,creamthebutterand sugartogether.Addflour.Spreadoutthe mixturebetweentwoparchmentpaper andleaveitinthefridgeuntilbecomes solid(aboutanhour).

3.Meltthechocolateinthemicrowave, stirringevery20seconds.

4.Pour90percentofthemelted chocolateontoabakingparchment-lined trayandplaceinthefridgetoset.

5.Usetheremainingtenpercenton bakingparchment,makeantlershapesfor thehead,alsoplaceinthefridgetochill.

6.Heattheovento200ºC.

7.Tomaketheprofiterolesheatupthe waterandbuttertogether.Bringthemto boilthenaddflour.Cookitforabout4-5 minutesonalowheatwhilestiringthe doughcontinuously.Addthedoughtoa standmixer,mixitonlowspeeduntilit coolsdownthenaddtheeggsslowly. Onceit'sreadypipeitonatrayinto roundsabout3-4cmwide.

8.Cutdiscsinthecraquelinwithawarm pastrycutter,thesamesizeasprofiterole andplacecarefullyontop.

9.Placeintheovenandlowerthe

temperatueeto170ºCfor30minutes.

10.Whiletheprofiterolesarecooking, makethepastrycreamandchantilly.

11.Tomakethepastrycream,inamixing bowladdsugar,cornflour,yolksandmix together.Inaseparatepanaddmilkand heatitup.Slowlyaddyoumilktoyour yolkmixturewhilecontinouslywhiskingit. Addvanillaandpourtheyolkmilkmixture backtoyourpan.Onalowheatstirituntil itstartstothicken.Onceit'sready,storeit inabowlcoverthetopwithclingfilm. Makesuretheclingfilmtouchesthe creamandthere'snoairbetweenthe clingfilmandthemixture.

12.Forthechantillycreamaddall ingredientstogetherandwhiskitwitha handmixeruntilyouachievestiffpeaks. Makessureallyouringredientsarecold. 13.Taketheprofiterolesouttheovenand allowtocool.

hatisaginconceivedandmade inthePeakDistrictdoingon theshelvesofabarina boutiquehotelintheMediterranean?It’s aquestionthatyouwillhavetoask MichaelZammitTabona,whooperatesa numberofhotelsundertheMZT banner,andhaschosenShivering Mountainasthepremiumhousegin brandathisexclusiveVillageBoutique& SpainNaxxar,Malta.Thehotelis locatedinthenorth-eastoftheisland andisashortdrivefromthecapital, Valletta.

“Thebuildingisover500yearsold andhaslotsoforiginalfeatures,”said Michaelofthe29-bedroomhotel.“I wantedtohaveasmallboutiquehotel withtheamenitiesofafive-starhotel. It’sveryquaintandvisitorscan experienceMaltesevillagelifefirsthand.”

Askedwhyhechosethisspecificgin, hesaid:“ShiveringMountainginwas introducedtobebymyfriendAndy DaykinwhousedtoworkatSheffield UnitedFC.Wehadaworking relationshipwiththeclubandtogether withVisitMaltaandtheFortinaSpa Resortwesponsoredtheclub.

“Oncethesamplesarrivedwedidan in-housetasting…andwelovedit.We

thendecidedtoaskfordistribution rightsintoMaltaandbecametheirfirst export.”

TheideaforShiveringMountainwas developedbyNickMalaczynskiwho returnedtohisnorthernrootsafter spendingthemajorityofhiscareerin London,aswellasworkingoverseas. BorninDronfield,heboughtanold farmhouseinHathersagein1997with theintentionofusingitasaretreat, beforemovingtherepermanentlywith hisfamilyin2011.Theproperty,which hasstunningviewsoverMillstoneand StanageEdges,alsohadanumberof outbuildings,whichNickaimedtoput touse-hejustdidn’tknowhow.

“I’dbeenlookingatgrowing botanicalstosupportthecraftginboom andslowlythisprogressedintomaking theginitself,”hesaid.“Asusual,Iwas abouttenyearsbehindthetimesasthe UKginmarketisverycrowded,butI thinkthatmanyofthenewerdistilleries aren’tdoingthingsverywellandthat therewasroomforamuchmore professionalapproach,whichwe’vetried toexecute.”

ShiveringMountainginisa communityenterprisethatemployslocal experts,suppliersanduseslocal botanicalsandingredientswherepossible

tocreateatrulyauthenticPeakDistrict ginexperience.Ittakesitsnamefrom thenicknameofMamTor(Mother Mountain),amountainthatoverlooks CastletonintheHopeValley.Nickspent muchofhisyouthwalkingupthat mountainandontheridgewalksaround thevalley–itseemedtheperfectfit.

“Twomillionyearsago,whenthePeak Districtwasasubterraneanseanexttoa riverestuary,theseacreaturesdied, formingaweak,porous,limestoneover themilleniaandtheestuarywascut throughhard,heavynon-porous gritstone,”saidNickofthearea’shistory. “Volcanicactivitypushedupanunstable geologycreatedfromthetwotypesof rock,wherethelimestonewasfrequently washedawaycreatingcavernsacrossthe areaandamountainthatisconstantly land-sliding–orshivering!

“Whenweweredecidingthenameof thebrand,welookedatanumberof storiesoriginatingfromthearea,but ShiveringMountainwastheclear winner.”

Havingbuiltandruninvestment companiesformostofhislife,Nickwas acompletenoviceaswereother membersofhisteam.Somehadhadbar experiencebutno-onehadmadealcohol previously.Thesolutiontocreatingtheir

ginwastoreadlotsofbooks,attendlots ofcoursesandhireadistillertoteach themtherudimentsofthebusiness.In 2019theydevelopedtheirfirstrecipe.

“Ithoughtthatthegincrazewas producingsomeridiculousrecipesand gimmicksthatwouldnotstandthetest oftime,”explainedNick.“Iwantedour gintobeauthentic–builtaround botanicalsavailablelocally,heldina bottlemadelocally,basedonalocal story,promotingtheareaandsoldby localpeople.

“MydadwasabigforagerwhenIwas youngandweusedtopickbilberries andsloes,aspartofourbounty.Iguess ourfirstginwasan‘homagetomy father’sforaging.Wetooksloesfromthe valley,gorseontheslopesupthe mountainsidesandheatherandbilberries onthetopsofthehillsandmoors.This isthespineofallourginsatthe moment.”

Whenitcametothe2022 Westside&SouthsideRestaurant& BarAwards,competitionwaskeenof course,andweweredelightedat howmanylocalrestaurants,barsand cafesenteredintothefestivities.It wasfantastictoseeallofthe nomineestogetherinoneroom, celebratingthesuperbqualityof

independenteateriesfoundinour region.

Inhisbook,Patrickexplainswhere allthesecustomscomefrom,but beforewegetintoalltheweirdand wonderfulreasonswhywecelebrate Christmasinthewaywedo,let’sstart withthebirthofJesus.

TheNativity

“Theaccountsmayhavebeenslightly changedover2,000years,butwhatIlike todoisseeifthereisanyscienceto backthenativitystoryup,”saysPatrick.

Itshouldn’tcomeasmuchofashock thatJesuswasn’tbornon25December, norwashebornonwhatwethinktobe theyear0AD.Aftermuchresearch, PatrickdiscoveredthatJesuswasactually borninSeptember7BC.

ForPatrick,themostimportantpartof thenativitystoryisthestar,whichwasn’t actuallyastaratall.DavidHughes,an astronomerfromTheUniversityof Sheffield,introducedPatricktotheidea oftripleconjunctions.Theseoccurwhen JupiterandSaturnaligninthe constellationofPisces,creatingalight thatwouldhavelookedlikeabrightstar.

Themagi(orwisemen)whofollowed this‘star’mayhaveevenrealisedthe significanceofthisrareevent,asJupiter representsthekingofthegods,Saturn signifiesthelandofPalestineandPisces isthesignofthezodiacwhichrepresents theJews.

Combinethiswiththefactthatoneof thesetripleconjunctionstookplacein 7BCandthatscientistshaveworkedout thatJesuswasbornbetween8and6BC, andthisfitsPatrick’stheory.

“Ofcourse,itsoundssillytosayJesus wasbornin7BC,butdoesitmatter?Ijust lookat25DecemberasJesus’official birthday,abitlikethequeen,”saysPatrick.

Santa,drugsand StNicholasgold

OvertheyearsSantaClaus,Father ChristmasandStNicholashaveall combinedtocreateonebigfatfigurein aredandwhitesuitwhodelivers presentstochildren.

WhentheDutchimmigrantslandedin NewYork(originallyNewAmsterdam) inthe17thcentury,theybroughtSinter Claes(orSinterklaas)withthem.Hewas alegendaryfigurewithcharacteristics similartoStNicholas,whilsttheideaof FatherChristmasstartedinGermany withtheNorsegodOdin,whowould rideaneight-leggedhorsethroughthe skyandfillchildren’sbootswithtreats. Andthentherewas4thcenturyfigure, SaintNicholas,whooriginatedinTurkey.

“There’sastoryaboutafriendofSt Nicholaswhocouldn’taffordhisthree

daughters’weddings,”explainsPatrick.“So, StNicholasthrowsabagofgoldthrough eachdaughter’swindow.However,the youngestdaughterhasherweddinginthe winter.Sheshutsherwindow,soheclimbs upontotheroofanddropsthefinalbagof golddownthechimney.”

Laplandhasalsoplayedahugepart. Tribeswhomadetheirlivingoff reindeerinNorthernLaplandwouldlive inyurtswithsmallopeningstoletin visitorsandletoutsmoke.Whenpeople wereill,witchdoctorswouldenter throughthesechimney-likeentrances anddelivergiftsofhealing.Patrickalso explainswhyourmoderndaySantais representedas‘merry’.

“InLaplandyoucan’teasilymake alcoholbecauseofthelow temperatures,”explainsPatrick.“Butthey realisedthattheredandwhite mushroomishallucinogenicandifyou takeit,yougetthefeelingthatyouare leavingyourbodyandflyingthroughthe air–ho,ho,ho!”

Theredandwhiteofthemushrooms mayverywellhavetriggeredthecolour schemeoftoday’sSantasuit,butitwas alsoTolkienwhoinfluencedthischange whenhepostedChristmasletterstohis childrenwithillustrationsofaredFather Christmas.Thenin1931,Coca-Cola cementedtheidea,withaSantawearinga redtopandtrouserswithawhitefurtrim tomatchtheirlogo,whichhascaptured thepublic’simaginationeversince.
