"The Hautes-Côtes de Beaune Blanc from PYCM features lovely aromas of grapefruit, lime zest, and fresh white flowers. The texture is light but crisp, and a salty minerality shines through on the palate. The grapes come from three parcels in the Hautes Côtes, named for a nearby nature preserve in Cormot-Vauchignon at over 400 metres elevation—the delayed budbreak at this cool site saved these vines from damage during the frost of 2021. The grapes were fermented in large, older oak casks that have now been racked into tank."
